Black Bean Chicken - Serves 5

Ingredients
- Coconut oil - 1tbsp
- Chicken mince - 500g
- Onion granules - 1tsp
- Garlic - 3 granules, sliced
- Baby corn - 145g (approx - 1 small pack)
- Green beans - 1/3 pack (70-80g approx), ends removed and cut into bite size batons
- Bean sprouts - 1/2 pack - 150g approx
- Spring onions - 3-4, cut into bite size batons
- Brown rice - 330g aprox
- Soy sauce or Kelpamare - 1tsp
- Toasted sesame oil
- Black bean paste - 60g approx
Method

Cook the rice in salted water, according to pack instructions

Meanwhile in a large pan or wok, add the coconut oil to a pan with the onion granules and cook off for a few minutes. Next, add the chicken mince and garlic, and cook until browned before adding the black bean paste, soy sauce, toasted sesame oil and a good splash of water to loosen. Cook for a few minutes.

Next, add the green beans, bean sprouts and baby corn, pop a lid on and cook for 5 minutes, ensuring there is enough liquid to gently steam.

Serve with the rice and enjoy.
