Grated tomato on toast - serves 1

Ingredients
- 2 large vine tomatoes
- EVOO
- Seasoning such as Herbamare Herb Sea Salt
- Black pepper
- Greens for garnish such as fresh chives, spring onions or cress
- 1 x slice of bread such as Sourdough Ciabattin
- 1 x soft boiled egg (optional)
Method
- Grated the tomatoes on the large side of the grated into a bowl.
- Add a good glug of EVOO, and season the tomato mix to taste.
- Toast the bread and add the tomato mixture.
- Top with greens and serve with a soft boiled egg - enjoy!
