Grated Tomato ? A Quick & Easy Savoury Breakfast Recipe ? Right guys, my good friends told me about this unreal recipe and I just had to try it because it is everything I shout about: Cheap, quick, easy, utilizing fresh wholefoods, packed with essential micronutrients and antioxidants. A great savoury breakfast option too! What’s not to love? I have opted for these vine tomatoes, that vine is like the umbilical cord of the plant world, supplying these tomatoes with maximum nutrients and antioxidants like lycopene and beta-carotene. So beautiful. Now the key here – GRATING the tomato. What does this do? Maximum taste, maximum absorption capabilities – much gentler on your digestion and you literally get to make the best use of every bit of goodness they contain. For anyone who doesn’t love fresh tomatoes? This is also a game changer – it completely changes the taste and texture! Next, season your tomato up – I have opted for some EVOO, some Herbamare Herb Salt to add some extra herbal aromas (totally brings the flavour of the tomatoes out, and is a must for me), as well as providing the good quality sea salt component, of course, a crack of black pepper and then plate. I used Sourdough Ciabattan here - toasted lightly, top with your tomato mixture, then top with some green (my friends were saying how good fresh chives are, so I’d try that if possible), but I couldn’t get them, so I’ve went with some really finely sliced spring onions and some homegrown cress instead. Stick a nice runny egg on the side, and just look at that beauty. As if we were in the Med... ?? Enjoy! X?

Grated tomato on toast - serves 1

Ingredients

  • 2 large vine tomatoes
  • EVOO
  • Seasoning such as Herbamare Herb Sea Salt
  • Black pepper
  • Greens for garnish such as fresh chives, spring onions or cress
  • 1 x slice of bread such as Sourdough Ciabattin
  • 1 x soft boiled egg (optional)

Method

  • Grated the tomatoes on the large side of the grated into a bowl.
  • Add a good glug of EVOO, and season the tomato mix to taste.
  • Toast the bread and add the tomato mixture.
  • Top with greens and serve with a soft boiled egg - enjoy!
