Gut Health Strawberry Jam

Ingredients

  • 40g chia seeds
  • 400g strawberries
  • 1/4 of a fresh lemon - juice squeezed
  • 1 tbsp honey (optional)
  • 400ml hot water

Method

  1. Cut the greens off the strawberries and add to a pot. Add the hot water and heat gently for 10 minutes. Mash with a masher once softened and simmer for a further 5 minutes.
  2. Add your drizzle of honey and squeeze of lemon to the strawberry mixture before turning off the heat.
  3. Add the chia seeds and mix well.
  4. Leave to cool for around 10 minutes before adding to a sealable jar.
  5. Store in the fridge for up to 1 month.
