Gut Health Strawberry Jam

Ingredients
- 40g chia seeds
- 400g strawberries
- 1/4 of a fresh lemon - juice squeezed
- 1 tbsp honey (optional)
- 400ml hot water
Method
- Cut the greens off the strawberries and add to a pot. Add the hot water and heat gently for 10 minutes. Mash with a masher once softened and simmer for a further 5 minutes.
- Add your drizzle of honey and squeeze of lemon to the strawberry mixture before turning off the heat.
- Add the chia seeds and mix well.
- Leave to cool for around 10 minutes before adding to a sealable jar.
- Store in the fridge for up to 1 month.
