Homemade Coleslaw - serves 4-8 people

Ingredients
- 1 grated carrot
- 1/2 red onion, thinly sliced
- 1/2 small red cabbage, thinly sliced
- 1 heaped tsp wholegrain mustard
- pinch of salt (coarse sea salt, Celtic salt or Herbamare are firm favourites of mine)
- 2-3 tbsp mayo of choice (olive oil, or avocado mayonnaise are nice options)
Method
- Mix all the ingredients together.
- Serve and enjoy!
