Mediterranean Butter Beans - serves 2-4

Ingredients

  • 1 x small white onion, diced
  • 1 tbsp EVOO
  • 400g butter beans (reserve some liquid from the tin or box)
  • 3 x cloves of garlic (sliced)
  • 1 tsp smoked paprika
  • 1 tsp Italian seasoning
  • 3-4 small vine salad tomatoes – chopped roughly. I used Viola cocktail tomatoes – deeper colour means more antioxidants
  • Parmesan (sprinkle, optional)
  • 1tbsp lemon zest
  • Fresh basil
  • Herbamare Spicy
  • 1/4 tsp Chilli flakes
  • Seeded sourdough bread slices (optional)
  • Black pepper

Method

  • Add EVOO to a pan and sauté the onion and garlic for a few minutes. Add the tomatoes, smoked paprika, Italian seasoning, lemon zest, Herbamare seasoning, chilli flakes, and the butter beans with a few tablespoons of the liquid they were in. Sauté for a few minutes.
  • Serve with any accompaniments and I like to finish off with a crack of black pepper, some fresh basil, a sprinkle of parmesan and remaining lemon zest.
