Mediterranean Butter Beans - serves 2-4
Ingredients
- 1 x small white onion, diced
- 1 tbsp EVOO
- 400g butter beans (reserve some liquid from the tin or box)
- 3 x cloves of garlic (sliced)
- 1 tsp smoked paprika
- 1 tsp Italian seasoning
- 3-4 small vine salad tomatoes – chopped roughly. I used Viola cocktail tomatoes – deeper colour means more antioxidants
- Parmesan (sprinkle, optional)
- 1tbsp lemon zest
- Fresh basil
- Herbamare Spicy
- 1/4 tsp Chilli flakes
- Seeded sourdough bread slices (optional)
- Black pepper
Method
- Add EVOO to a pan and sauté the onion and garlic for a few minutes. Add the tomatoes, smoked paprika, Italian seasoning, lemon zest, Herbamare seasoning, chilli flakes, and the butter beans with a few tablespoons of the liquid they were in. Sauté for a few minutes.
- Serve with any accompaniments and I like to finish off with a crack of black pepper, some fresh basil, a sprinkle of parmesan and remaining lemon zest.
