The perfect Mexican side dish, it’s so quick and easy to whip up your own batch of this creamy and tangy homemade guacamole. Made from avocados which are high in potassium, fibre and healthy fats, guacamole is great served as a side, with nachos for a healthy snack or with a nice fresh salad.

1. Cut an avocado in half and de-stone. Scoop out the inside of the avocado and dollop into a mixing bowl.

2. With a fork, mash the avocado till it’s light and creamy. It doesn't matter if there are lumps, this gives it more texture.

3. Add in the chopped tomato, lime juice, crushed garlic, onion and seasoning. Mix together.

4. Serve with some green salad leaves (rocket, watercress & spinach), taco shells and nachos. Delicious with my Mexican Beanie Rice.
