I tried the Chia Mango Pot from Pret A Manger and really enjoyed it and decided to make a homemade version with passion fruit. Passion fruit has a tropical and fresh flavour which is very refreshing to wake up to. A healthy protein packed start to the day!
Passionfruit compote
Desiccated coconut
Fresh berries
1. In a large bowl, add in the dairy-free milk, chia seeds, passion fruit coulis and maple syrup. Stir and leave to jellify/thicken. This will take about 1 hour.
Spoon into a serving glass, top off with more passion fruit coulis, a sprinkle of desiccated coconut and berries.
Best enjoyed fresh.
