I tried the Chia Mango Pot from Pret A Manger and really enjoyed it and decided to make a homemade version with passion fruit. Passion fruit has a tropical and fresh flavour which is very refreshing to wake up to. A healthy protein packed start to the day!

1. In a large bowl, add in the dairy-free milk, chia seeds, passion fruit coulis and maple syrup. Stir and leave to jellify/thicken. This will take about 1 hour.
Spoon into a serving glass, top off with more passion fruit coulis, a sprinkle of desiccated coconut and berries.
Best enjoyed fresh.

Chia seeds are not only superfoods, they are super fuel foods too! They provide a stable supply of long-lasting energy thanks to their high protein, good fats and fibre content. Chia seeds are also packed with calcium, Omega 3s and antioxidants – no wonder they are so super!
