Overnight Passion Fruit Chia Pudding

I tried the Chia Mango Pot from Pret A Manger and really enjoyed it and decided to make a homemade version with passion fruit. Passion fruit has a tropical and fresh flavour which is very refreshing to wake up to. A healthy protein packed start to the day!

Ingredients

Overnight Passion Fruit Chia Pudding

  • 200ml of dairy-free milk (I use unsweetened almond)
  • 1 tbsp of passionfruit coulis
  • 8 tbsp of chia seeds
  • 1/4 tsp of maple syrup
  • To serve

    Passionfruit compote
    Desiccated coconut
    Fresh berries

How to make Overnight Passion Fruit Chia Pudding

1. In a large bowl, add in the dairy-free milk, chia seeds, passion fruit coulis and maple syrup. Stir and leave to jellify/thicken. This will take about 1 hour.

Spoon into a serving glass, top off with more passion fruit coulis, a sprinkle of desiccated coconut and berries.
Best enjoyed fresh.
