Pineapple Ice Lollies (Vegan)

The sun is finally shining and I have been craving fresh & refreshing foods. Ice lollies are perfect for cooling down in warm weather and are lovely for any age to make and enjoy. They are fresh, fruity and delicious. These pineapple lollies take a few minutes to make and enjoy. What could be better than some fresh, homemade ice lollies?!

Ingredients

Pineapple Ice Lollies (Vegan + Dairy free)

  • 1 pineapple
  • 400ml of dairy-free milk (I use unsweetened almond milk)
  • 2 tablespoons of maple syrup
  • 1/2 a lemon (juice)
  • Desiccated coconut (to decorate)

How to make Pineapple Ice Lollies (Vegan)

1. Place the pineapple, dairy-free milk, maple syrup, lemon juice into a food processor.

2. Whizz up until smooth.
This will take around  5-8 minutes.

3. Pour the mixture into lolly trays and pop in a lolly stick. Pop into the freezer and allow to set for 5-6 hours.

Serve whilst frozen and enjoy!
Keep stored in the freezer.
