Rich in protein and fibre, this delicious, refreshing quinoa salad makes a nutritious and filling light meal or side dish. With its pleasant nutty flavour and ‘superfood’ credentials, quinoa is a tasty, healthy and gluten-free alternative to other staples.


Quinoa Salad

  • 1 cup quinoa
  • 1 red onion, chopped into small chunks
  • 6 cherry tomatoes, quartered
  • 1 yellow pepper, chopped into small chunks
  • 2 tsp fresh coriander, shredded
  • Black pepper, to season
  • A few leaves of basil, to garnish

How to make Quinoa Salad

1. Cook the quinoa, until tender, approximately 15 minutes.

2. Mix the rest of the ingredients into the quinoa.

3. Serve.
