These are the perfect 4pm snack – helping to regulate blood sugar levels and stave off sugar cravings before dinner. And they seriously taste amazing! Make a batch and store in the fridge for an easy grab-and-go, good-for-you snack.

1. In a high-powered blender or food processor, add all the ingredients except the cacao nibs and blend until ingredients are combined and mixture sticks together. If the mixture is too wet, add more oats mix; if the mixture is too dry, add a splash of warm water or some more peanut butter.
2. Once mixture is ready add the cacao nibs and pulse until cacao nibs are spread throughout.
3. Roll mixture into balls of your desired size.
4. Place balls into a air-proof container and refrigerate for up to 7 days.
