Tomato Courgetti with Homemade Pesto (201kcals)

This dish is the perfect comfort food. It provides all the warmth and comfort of traditional Italian dishes, with fewer calories! At just 201kcals, this is a great lighter option. The homemade pesto is so delicious, and the courgette provides a tasty crunch.

Ingredients

  • 150g courgette, spiralised or thinly shredded
  • 100g ripe plum tomatoes, roughly chopped
  • 3 tsp olive oil
  • 220ml water
  • 1 tsp pumpkin seeds
  • 1 clove garlic, crushed
  • 30g fresh basil
  • Sprinkling of Herbamare and black pepper

How to make Tomato Courgetti with Homemade Pesto

1. Add one teaspoon of the oil to a small saucepan. Add the tomatoes and 200ml of water and let them simmer away gently for 15-20 minutes.

2. Blitz together the pumpkin seeds, basil, garlic, remaining oil and a splash of water in a food processor until they form a thick paste.

3. Blanch the courgette noodles in boiling water for approximately 30 seconds and drain. 

4. Season the tomato sauce with Herbamare and pepper at the end of cooking, and then mix through the courgette.

Top with the pesto, serve and enjoy.
