This lovely creamy soup is super easy to make, healthy, tasty and filling – perfect for a delicious light lunch or warming starter.

Pick up these other ingredients from your favourite local store:

  • 2-3 courgettes washed and cubed
  • 3-4 shallots finely chopped
  • Fresh sprigs of basil, thyme and marjoram
  • 500ml milk
  • grated cheese to garnish
  • 1 tsp finely chopped parsley

How to make Creamy Courgette Soup

1. Add the courgettes, shallots, basil, thyme and marjoram to the vegetable stock, and simmer until the courgettes are tender. Remove pot from the heat. Season with Herbamare® Original seasoning salt.

2. In a separate pan, warm the milk but do not let it boil. Pour the milk into the vegetables, stir and garnish with cheese and parsley.
