Carrot Cake Energy Balls

Trying to avoid ultra processed snack options? ?? These homemade carrot cake energy balls are ridiculously easy to make, super duper nutritious, and are loved by all the family. I’ve aimed to make these to require minimal effort, not involving blenders and things to add to your washing pile. Literally add all the ingrdients together, give it a mix, roll and then dip and make prettier if you wish. Check out the recipe below:   Carrot Cake Energy Balls ?✨ Ingredients 1 cup medjool dates – 170g approx – soaked and mashed (reserve soaking liquor) 1 small carrot - 70g approx - grated 50g walnuts - chopped 50g oat flour or blitzed oats 1tbsp chia seeds 1/3 cup dessicated voconut unsweetened – 50g approx. (extra for rolling in at the end) 60ml Coc oil, melted 1tbsp honey – 15 g approx 1tsp ground ginger 1tbsp cinnamon Pinch of good quality salt (I used Celtic) A little white chocolate for drizzling at the end – 50g approx. Method 1. Soak the dates for a minimum of 10 minutes, or slightly longer if you have time. Mash in a large bowl with the back of the spoon reserving the soaking liquor. 2. Add the grated carrots, walnuts, oat flour, chia seeds, dessicated coconut, coconut oil, honey, ginger, cinnamon and salt. Mix. Add some of the soaking liquor from  the dates until the desired consistency is met (not too wet, not too dry and able to be easily rolled). 3. Once rolled into balls, roll the balls in a little extra dessicated coconut, and add a little drizzle of chocolate (one or the other topping or a combination of both). 4. These will keep in the fridge for up to a week. Enjoy ☺️

  • 1tsp ground ginger
  • 1tbsp cinnamon
  • Pinch of good quality salt (I used Celtic)
