Homemade Crispy Veggie Skins The ultimate food waste hack ✅ Restaurants often charge a fortune for these! Or some variation, anyway ? And here you are making them at home, when these veggie skins would normally just go in the bin, am I right? Delicious, nutritious and making a side dish or a snack out of, basically nothing (nutrition math ?) Plus, cooking habits like these make for massive change in the long run, and here’s why: • Reducing food waste – the oil and marinade was leftover from another recipe, the veggie skins weren’t going to be used (the veg themselves are being used for another meal), basically meal out of nothing! • Adding variety – I bet not many of us had some parsnip skins in the past week? Your gut will love you for it! • Using wholefoods – the potatoes, carrots and parsnips were unprocessed. The oil was a mixture of EVOO and some saturated fat from good quality chicken wings (very stable under heat and not to be demonized in moderation). The mayo I’d made from seed oil free sources – EVOO and avocado sources, with some cajun spice added – more to come on a homemade, healthy mayo soon. • Fakeaway options & limiting seed oils – rather than crisps or chips laden with additives and inflammatory seed oils, whip these up in no time instead – guilt free. Homemade Crsipy Veggie Skins - serving size is variable

Ingredients

  • Potato, carrot, parnsip or beeroot peelings from your latest meal - keep them in cold water to stop discolouration.
  • Oil of choice, I'd saved some chicken fat, combined with EVOO.
  • Seasoning mix - I went with a combination of garlic granules, onion granules, turmeric, oregano and Herbamare Spicy.
  • Cajun mayo - cajun spice mix mixed through your mayo of choice.

Method

  1. Mix the peelings with your oil and spice mix, Airfry or oven cook until lightly brown and crispy. Enjoy with a dip or on their own!
