UPF-free pancakes

Does anyone else feel like sometimes the directions of a recipe can be too much – exact quantities, that you need to spend time weighing out etc.? Recently, my kids have been asking for pancakes at the weekend, but sometimes on a weekday too, so I’ve had to master it by eye for quickness. So, I wanted to share this with you all in case it’s helpful for some happy kids/minimal hassle situations. So, here is my weekend (weekday recently with cutting the measuring!) pancakes ‘recipe’. Very rough quantities as you can see from the video (I just do it visually now) and many of the ingredients are totally optional or flexible! Go with what you have in: • Thick-bottom-of-the-bowl-layer of flour of your choice (I used plain flour) • Tsp baking powder • Heaped spoon unflavoured pea protein powder (optional) • Heaped spoonful of cinnamon • Heaped spoonful of milled flaxseed (optional) • 1 mashed banana • 1 egg • A touch of sugar and salt (optional) • Milk of choice until you make the right consistency – not too thick, not too thin. • A little drizzle of honey or maple syrup to serve along with some fruit (any types you have!) Honestly, with most recipes, in fact, you can afford to be really flexible, no need to measure exactly, don’t stress, and this makes it much less taxing and ultimately more likely that you’re going to be able to give it a whirl in the kitchen. UPF-free pancakes - serves 4

Ingredients

  • Thick-bottom-of-the-bowl-layer of flour of your choice (I used plain flour)
  • Tsp baking powder
  • Heaped spoon unflavoured pea protein powder (optional)
  • Heaped spoonful of cinnamon
  • Heaped spoonful of milled flaxseed (optional)
  • 1 mashed banana
  • 1 egg
  • A touch of sugar and salt (optional)
  • Milk of choice until you make the right consistency – not too thick, not too thin.
  • A little drizzle of honey or maple syrup to serve along with some fruit (any types you have!)
  • EVOO/butter

Method

  • Mix all the ingredients in a bowl

  • Heat a little drizzle of EVOO at a time in a pan and add a spoonful of pancake mix. Once bubbles form and pop in the mix it's ready to flip. Finish in the pan with a little blob of butter.
  • Serve with a drizzle of honey and fresh fruit.
